With Google Drive, docs that were once really easy to find (they were usually right up top) are no longer showing up in the document listing for me. I have to search for them for the titles to show up…anyone else experience this? It's rather annoying.

Helpful, but also very annoying. You can globally disable the feature (System Preferences -> General and untick "Restore windows when quitting and reopening apps").

If you want to keep it enabled, but don't want a specific app restoring windows when launching, here's a tip I just found: Hold shift when you launch an application to bypass resume and start that app fresh.
